Avocado & Egg Breakfast Sandwich

Ingredients
- 1 Bagel, sliced in half
- 4 T Bacon Fat
- 1 Large Egg
- 1 Avocado, peeled and pitted
- Salt and Pepper, to taste
- 2 T Cream Cheese, softened

Instructions
- Toast sliced bagel in a toaster until golden brown.
- Heat bacon fat in a frying pan over medium heat.
- Add egg.
- Pan-fry until set, 3 to 4 minutes.
- Mash avocado in a medium bowl.
- Sprinkle avocado mash with salt and black pepper.
- Spread cream cheese on each toasted bagel half.
- Top with mashed avocado and egg.
