Black Bean and Corn Salad

Time: 30 minutes
Servings: 6 servings

Ingredients

  • ½ C Cooked White Rice
  • 1 Avocado, diced
  • 1-14 oz Can Black Beans, drained & rinsed
  • 1-12 oz Can Corn, drained
  • 2 T Red Onion, chopped
  • 2 T Fresh Cilantro, chopped
  • Salt & Pepper, to taste

 

For the dressing

  • ¼ C Olive Oil
  • 2 T Lime Juice + Zest of 1 Lime
  • 1 tsp of Honey
  • ½ tsp Chili Powder
  • ¼ tsp Garlic Powder

Instructions 

  1. Whisk together the olive oil, lime juice, lime zest, honey, chili powder and garlic powder in a large mixing bowl.   
  2. Add the black beans, corn, red onion and Cilantro and toss to coat evenly.
  3. Fold in the cooked rice, avocado and salt & pepper to taste. 
  4. Cover and chill for an hour, or enjoy right away.
