Butterscotch Toffee Cookies

Servings: 4-5 dozen

Ingredients

  • 2 Large Eggs, room temperature
  • ½ C Canola Oil
  • 1 Pkg Butter Pecan Cake Mix
  • 1 Pkg Butterscotch chips (10-11oz)
  • 1 Pkg Milk Chocolate English Toffee Bits (8oz)

Instructions 

  1. Preheat the oven to 350°. Line 2 baking sheets with parchment paper and set aside. 
  2. Beat eggs and oil until blended in a large bowl. Gradually add cake mix and combine well.
  3. Fold in butterscotch chips and toffee bits.
  4. Roll cookie dough into tablespoon sized balls and place them 2 inches apart onto the prepared baking sheets. 
  5. Bake cookies for 10-12 minutes or until golden brown.
  6. Cool for 1 minute before moving to wire racks.
