Caprese Stuffed Portobello Mushrooms

Servings: 4 servings
Ingredients
- 4 Large Portobello Mushrooms, stems removed
- 2 T Olive Oil
- 2 Garlic Cloves, minced
- 2 Ripe Tomatoes, sliced
- 8 oz Fresh Mozzarella cheese, thinly sliced
- Balsamic Glaze, for drizzling
- Salt & Pepper, to taste
- Fresh Basil Leaves, for garnish

Instructions
- Preheat oven to 400℉.
- Line a baking sheet with parchment paper.
- Place the portobello mushrooms on the lined baking sheet.
- Drizzle olive oil and sprinkle minced garlic over the mushrooms. Season with salt & pepper.
- Roast the mushrooms in the oven for 10-12 minutes, or until slightly softened.
- Remove the mushrooms from the oven and let them cool.
- Layer each mushroom with sliced tomatoes and fresh mozzarella cheese.
- Return the mushrooms to the oven and bake for an additional 8-10 minutes, or until the cheese is melted.
- Remove from the oven and drizzle with balsamic glaze.
- Garnish with fresh basil leaves before serving.
