Chilled Cucumber Avocado Soup with Lime & Mint

Ingredients

  • 2 Large Cucumbers, peeled and roughly chopped

  • 2 Ripe Avocados, peeled and pitted

  • 2 C Plain Greek Yogurt (or unsweetened coconut yogurt for dairy-free)

  • 2 Scallions, white and green parts, chopped

  • 2 Cloves Garlic, minced

  • Juice of 2 Limes

  • ½ C Fresh Mint Leaves

  • ½ C Vegetable Broth (cold)

  • Salt and Pepper to taste

  • Olive Oil, for drizzling

  • Optional Toppings: diced cucumber, toasted pumpkin seeds, extra mint

Instructions

  1. Blend cucumbers, avocados, yogurt, scallions, garlic, lime juice, mint, and vegetable broth in a blender until completely smooth.

  2. Taste & Adjust with salt, pepper, and a little extra lime juice if you like more brightness.

  3. Chill in the fridge for at least 30 minutes to let flavors meld.

  4. Serve in chilled bowls. Garnish with a drizzle of olive oil, a sprinkle of pumpkin seeds, or a few leaves of mint.

Go Rogue by adding a pinch of Aleppo pepper for a gentle fruity heat or swapping mint for basil if you want an herby twist.
