Chilled Cucumber Avocado Soup with Lime & Mint
Ingredients

2 Large Cucumbers, peeled and roughly chopped

2 Ripe Avocados, peeled and pitted

2 C Plain Greek Yogurt (or unsweetened coconut yogurt for dairy-free)

2 Scallions, white and green parts, chopped

2 Cloves Garlic, minced

Juice of 2 Limes
-
½ C Fresh Mint Leaves

½ C Vegetable Broth (cold)

Salt and Pepper to taste

Olive Oil, for drizzling

Optional Toppings: diced cucumber, toasted pumpkin seeds, extra mint

Instructions

Blend cucumbers, avocados, yogurt, scallions, garlic, lime juice, mint, and vegetable broth in a blender until completely smooth.

Taste & Adjust with salt, pepper, and a little extra lime juice if you like more brightness.

Chill in the fridge for at least 30 minutes to let flavors meld.

Serve in chilled bowls. Garnish with a drizzle of olive oil, a sprinkle of pumpkin seeds, or a few leaves of mint.
