Crispy Artichoke Bites with Garlic Aioli

Ingredients
- ½ C Sunflower Oil
- 1 14 oz Can Artichoke Hearts
- ⅓ C AP Flour
- ½ tsp Smoked Paprika
- 2 Eggs
- 2 T Parsley, chopped
- ½ C Bread Crumbs
- ¾ C Mayonnaise
- 3 Garlic Cloves, minced
- 2 ½ T Lemon Juice
- ¾ tsp Salt
- ⅓ tsp Ground Black Pepper

Instructions
- Heat a large frying pan over medium heat and add sunflower oil.
- Drain the can of artichokes.
- Place the artichokes on a layer of paper towels in a single layer, gently pat them dry.
- Cut each artichoke in half lengthwise and arrange them cut side down on another layer of paper towels.
- Whisk together the eggs, parsley, salt, and pepper in a bowl.
- Combine the flour and paprika in a second bowl.
- Add the breadcrumbs into a third bowl.
- Coat each piece of artichoke, first in the flour, then the egg wash, and finally into the bread crumbs.
- Place each artichoke piece in the hot frying pan, ensuring they are in a single layer.
- Fry for about 2 minutes on each side or until golden brown.
- Transfer fried artichokes to a paper towel lined dish to absorb any excess oil.
- Mix mayonnaise, garlic, lemon juice, salt, and pepper in a bowl until well combined to make aioli dip.
- Cover and refrigerate for at least 30 minutes before serving.
- Transfer the aioli into a serving dish and place the fried artichoke around it.
- Enjoy!
