Crispy Artichoke Bites with Garlic Aioli

Ingredients

  • ½ C Sunflower Oil
  • 1 14 oz Can Artichoke Hearts
  • ⅓ C AP Flour
  • ½ tsp Smoked Paprika
  • 2 Eggs
  • 2 T Parsley, chopped
  • ½ C Bread Crumbs
  • ¾ C Mayonnaise
  • 3 Garlic Cloves, minced
  • 2 ½ T  Lemon Juice
  • ¾ tsp Salt
  • ⅓ tsp Ground Black Pepper
Crispy Artichoke Bites

Instructions 

  1. Heat a large frying pan over medium heat and add sunflower oil. 
  2. Drain the can of artichokes. 
  3. Place the artichokes on a layer of paper towels in a single layer, gently pat them dry. 
  4. Cut each artichoke in half lengthwise and arrange them cut side down on another layer of paper towels. 
  5. Whisk together the eggs, parsley, salt, and pepper in a bowl. 
  6. Combine the flour and paprika in a second bowl. 
  7. Add the breadcrumbs into a third bowl.
  8. Coat each piece of artichoke, first in the flour, then the egg wash, and finally into the bread crumbs. 
  9. Place each artichoke piece in the hot frying pan, ensuring they are in a single layer. 
  10. Fry for about 2 minutes on each side or until golden brown.
  11. Transfer fried artichokes to a paper towel lined dish to absorb any excess oil.
  12. Mix mayonnaise, garlic, lemon juice, salt, and pepper in a bowl until well combined to make aioli dip.
  13. Cover and refrigerate for at least 30 minutes before serving. 
  14. Transfer the aioli into a serving dish and place the fried artichoke around it. 
  15. Enjoy!
