Honey Mustard Glazed Pork Tenderloin

Ingredients
- 1 lb Pork Tenderloin
- 2 T Olive Oil
- ¼ C Honey
- 2 T Dijon Mustard
- 1 T Whole Grain Mustard
- 2 Garlic Cloves, minced
- 1 T Apple Cider Vinegar
- 1 tsp Dried Thyme
- Salt & Pepper, to taste
- Fresh Parsley, chopped, for garnish

Instructions
- Preheat the oven to 350°.
- Grease a baking dish with olive oil or cooking spray.
- Season the pork tenderloin with salt & pepper on all sides.
- Whisk together honey, Dijon mustard, whole grain mustard, minced garlic, apple cider vinegar, and dried thyme in a small bowl to make the glaze.
- Heat olive oil in a large skillet over medium heat.
- Add the seasoned pork tenderloin to the skillet & cook until browned on all sides, about 2-3 minutes per side.
- Roast in the preheated oven for 20-25 minutes, or until the pork reaches an internal temperature of 145℉.
- Remove the pork tenderloin from the oven and let it rest for a few minutes before slicing.
- Garnish with chopped fresh parsley before serving.
