Irish Cheddar & Herb Soda Bread with Whiskey Honey Butter

Ingredients
For the Soda Bread
- 2 C All-Purpose Flour
- 1 C Whole Wheat Flour
- 1 tsp Baking Soda
- 1 tsp Kosher Salt
- 1 T Fresh Thyme, chopped
- 1 T Fresh Parsley, chopped
- 1 C Sharp Irish Cheddar, shredded
- 1 ½ C Buttermilk
For the Whiskey Honey Butter
- ½ C Softened Butter
- 1 T Irish Whiskey
- 1 T Honey
- Pinch Flaky Sea Salt

Instructions
- Preheat oven to 400°F. Whisk flours, baking soda, and salt in a large bowl.
- Fold in fresh herbs and shredded cheddar.
- Pour in buttermilk and stir until a shaggy dough forms.
- Turn dough onto a floured surface and gently shape into a round loaf.
- Score a deep cross across the top of the loaf.
- Transfer to a parchment-lined baking sheet.
- Bake 35–40 minutes until golden and hollow-sounding when tapped.
- Whisk butter, whiskey, honey, and salt until smooth.
- Slice bread slightly warm and serve with whiskey honey butter.
