Rogue Banana Bread

Ingredients

  • 3 Very Ripe Bananas, mashed (1½ cups)
  • ½ C Unsalted Butter, melted & slightly cooled
  • ¾ C Brown Sugar
  • 2 Large Eggs, room temperature
  • 1 tsp Vanilla Extract
  • 1¾ C All-Purpose Flour
  • 1 tsp Baking Soda
  • ½ tsp Kosher Salt
  • ½ tsp Cinnamon (optional but recommended)
  • ¼ C Sour Cream or Greek Yogurt

Instructions

  1. Preheat your oven to 350°F.
  2. Grease and line a 9x5 loaf pan with parchment for clean removal.
  3. Mash the bananas until mostly smooth but not pureed.
  4. Stir in melted butter and brown sugar until combined.
  5. Whisk in the eggs one at a time, then add vanilla and sour cream.
  6. Whisk together flour, baking soda, salt, and cinnamon in a separate bowl.
  7. Fold the dry mixture into the wet ingredients just until no streaks remain. Do not overmix.
  8. Pour batter into the prepared pan and smooth the top.
  9. Bake 55–65 minutes, or until a knife inserted in the center comes out clean with a few moist crumbs.
  10. Cool in the pan for 10 minutes, then transfer to a rack. Let it cool at least 30 minutes before slicing.
