Rogue Banana Bread

Servings: 8-10 Slices
Ingredients
- 3 Very Ripe Bananas, mashed (1½ cups)
- ½ C Unsalted Butter, melted & slightly cooled
- ¾ C Brown Sugar
- 2 Large Eggs, room temperature
- 1 tsp Vanilla Extract
- 1¾ C All-Purpose Flour
- 1 tsp Baking Soda
- ½ tsp Kosher Salt
- ½ tsp Cinnamon (optional but recommended)
- ¼ C Sour Cream or Greek Yogurt

Instructions
- Preheat your oven to 350°F.
- Grease and line a 9x5 loaf pan with parchment for clean removal.
- Mash the bananas until mostly smooth but not pureed.
- Stir in melted butter and brown sugar until combined.
- Whisk in the eggs one at a time, then add vanilla and sour cream.
- Whisk together flour, baking soda, salt, and cinnamon in a separate bowl.
- Fold the dry mixture into the wet ingredients just until no streaks remain. Do not overmix.
- Pour batter into the prepared pan and smooth the top.
- Bake 55–65 minutes, or until a knife inserted in the center comes out clean with a few moist crumbs.
- Cool in the pan for 10 minutes, then transfer to a rack. Let it cool at least 30 minutes before slicing.
