Rogue Popcorn: Chili-Lime Parmesan Popcorn

Servings: 4-6 Snack Servings
Ingredients
- ½ cup Popcorn Kernels
- 2½ T Neutral Oil (canola or grapeseed)
- 3 T Unsalted Butter
- Zest of 1 Lime
- 1–2 T Fresh Lime Juice (to taste)
- ¼–½ tsp Chili Flakes (adjust to heat preference)
- ½ tsp Smoked Paprika
- ½ C Finely Grated Parmesan Cheese
- Fine Sea Salt, to taste

Instructions
- Place a large, heavy-bottomed pot over medium heat.
- Add the oil and drop in 2–3 popcorn kernels.
- Cover and wait until they pop—this tells you the oil is ready.
- Add the remaining kernels, cover the pot, and gently shake to coat them in oil.
- Keep the lid on and listen.
- Shake the pot occasionally to prevent burning as the kernels pop.
- Remove the pot from the heat immediately when the popping slows to about 2 seconds between pops. Let it sit covered for 10 seconds, then uncover and pour the popcorn into a large bowl.
- Melt the butter gently in a small pan. You want it warm not sizzling.
- Drizzle the melted butter over the popcorn while it’s still hot.
- Toss well.
- Add lime zest, lime juice, chili flakes, smoked paprika, and a generous pinch of fine sea salt.
- Toss again.
- Sprinkle the Parmesan over the popcorn in stages, tossing between additions so it sticks evenly instead of clumping at the bottom.
- Taste.
- Add more salt, chili flakes, or lime if needed. This is popcorn—adjusting is part of the process.
