Seven-Minute Frosting

Time: 25 Minutes
Servings: 6 Cups

Ingredients

  • 3 Large Egg Whites, room temperature
  • 1 ½ C Sugar
  • ¾ C Water
  • 1 T Light Corn Syrup
  • 2 tsp Pure Vanilla Extract
  • ½ tsp Cream of Tartar
  • ½ tsp Salt

Instructions

  1. Bring a few inches of water to a boil in a medium saucepan over medium-high heat.
  2. Whisk the egg whites, sugar, water, corn syrup, vanilla, cream of tartar, and salt in a large heatproof glass bowl.
  3. Set the bowl over the saucepan, making sure the bottom does not touch the water.
  4. Beat the mixture on low speed until the sugar dissolves and it begins to thicken, about 1 to 2 minutes. If sugar crystals form on the sides, brush them down with a wet pastry brush.
  5. Increase the speed to medium-high and beat until stiff, glossy peaks form, about 7 minutes.
  6. Remove the bowl from the heat and continue beating until the frosting cools slightly, about 30 seconds.
  7. Use immediately while the frosting is still slightly warm. It will firm into a delicate shell as it cools.
