Smoked Sausage Burnt Ends with Honey BBQ Glaze

Ingredients

  • 3 lbs Smoked Sausage (beef, pork, or a combination)
  • 2 T Yellow Mustard
  • 2 T Brown Sugar
  • 1 T Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • ½ tsp Black Pepper

 

Honey BBQ Glaze

  • 1 C BBQ Sauce
  • ¼ C Honey
  • 2 T Unsalted Butter, melted
  • 1 T Apple Cider Vinegar

Instructions

  1. Preheat smoker or grill to 250°F for indirect cooking.
  2. Slice sausage into 1-inch pieces.
  3. Combine brown sugar, smoked paprika, garlic powder, onion powder, and black pepper in a small bowl.
  4. Coat sausage pieces with mustard.
  5. Sprinkle seasoning mixture evenly over the sausage.
  6. Arrange sausage pieces in a single layer on the smoker grate.
  7. Smoke for 1 hour until the edges begin to darken and caramelize.
  8. Whisk BBQ sauce, honey, melted butter, and apple cider vinegar together in a mixing bowl.
  9. Transfer smoked sausage to a disposable aluminum pan or cast-iron skillet.
  10. Pour honey BBQ glaze over the sausage.
  11. Toss until every piece is evenly coated.
  12. Return the pan to the smoker.
  13. Cook for an additional 45–60 minutes, stirring once halfway through cooking.
  14. Remove from the smoker when the glaze becomes thick, sticky, and caramelized.
  15. Rest for 5 minutes before serving.
  16. Serve hot with toothpicks as an appetizer or pile onto toasted slider buns.
